ROK:BRGR owner Marc Falsetto and Executive Chef Robbyns Martinez put the mark in downtown Fort Lauderdale with ROK:BRGR, the area’s first gastropub, which just so happens to have one hell of a burger. While the menu offers a variety of stellar items, today it’s best known for its beef patties, a proprietary blend of Black Angus brisket, short rib and chuck, and one of the only restaurants in the city that guarantees Fresh From Florida certified meat. Here, the burger starts with a course grind that’s delivered fresh — never frozen – while Martinez loosely hand-packs each burger, a key to keeping each patty tender and juicy. It’s seasoned with nothing but sea salt and pepper, and because they serve mammoth 10-ounce burgers, a flattop grill won’t cut it. Instead, each patty is grilled over an open flame at a high temp for a good sear on each side. The final component: an artisan brioche bun delivered daily by a local baker. And it doesn’t end there. Thanks to Martinez’s Latin heritage, you’ll see plenty of South American influence across the menu, from chorizo and poblano peppers, to chipotle cheddar cheese and a guacamole topping.
